Rava Dhokla Recipe: A Perfect Summer Breakfast

Rava Dhokla is a light, fluffy, and nutritious steamed dish that makes an ideal breakfast or snack during the hot summer months. Ingredients

  • 1 cup rava (semolina)
  • 1 cup curd (yogurt)
  • ½ cup water
  • 1 tsp ginger-green chili paste
  • Salt to taste
  • 1 tsp sugar
  • 1 tsp fruit salt (eno)
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 8-10 curry leaves
  • 2 green chilies, slit
  • 1 cup water (for tempering)
  • 1 tsp sugar (for tempering)
  • 2 tbsp coriander leaves, chopped
  • 1 tbsp lemon juice

Step-by-Step Instructions

Step 1: In a large mixing bowl, combine rava, curd, water, ginger-green chili paste, and salt. Mix well to form a smooth batter.

Step 2: Add sugar and mix again until fully incorporated.

Step 3: Let the batter rest for 15-20 minutes. This allows the semolina to absorb moisture and results in a softer texture.

Step 4: Grease a steaming tray or plate with oil. Just before steaming, add fruit salt to the batter and gently mix. Immediately pour the batter into the greased container.

Step 5: Place the container in a preheated steamer. Steam for 10-12 minutes, or until a toothpick inserted in the center comes out clean. Allow it to cool slightly, then cut into pieces.

Step 6: For the tempering, heat oil in a small pan. Add mustard seeds and let them crackle. Then add sesame seeds, curry leaves, and green chilies. Sauté for a few seconds.

Step 7: In a bowl, mix water, sugar, and lemon juice. Pour this mixture into the tempering and let it simmer for a minute. Pour the tempering evenly over the dhokla pieces. Garnish with fresh coriander leaves and serve warm with chutney.
