Ingredients
- 1 cup semolina
- 1 cup thick curd
- 1/2 to 1 cup water
- 1 small onion
- 1-2 green chilies
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 8-10 curry leaves
- 1 tbsp oil or ghee
- Salt to taste
- 1 cup chopped veggies (carrot, capsicum, beans)
- 1 tbsp peanuts
- Fresh coriander leaves
Step-by-Step Instructions
Step 1: Dry Roast the Semolina
Begin by dry roasting the semolina on medium heat until it turns slightly aromatic. Set aside.
Step 2: Prepare the Curd Mixture
In a mixing bowl, whisk curd with water and salt until smooth. Keep it aside.
Step 3: Temper the Spices
Heat oil or ghee in a pan. Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, peanuts, and green chilies.
Step 4: Sauté Onions and Vegetables
Add chopped onions and sauté until soft. Toss in chopped vegetables like carrot, capsicum, and beans. Cook for 2-3 minutes.
Step 5: Add the Curd Mixture
Lower the heat and pour in the curd mixture, stirring continuously to prevent curdling.
Step 6: Combine with Semolina
Add the roasted semolina (rava) while stirring to avoid lumps. Adjust salt and add black pepper if desired. Cover and cook for 3-5 minutes until soft and fluffy.
