Sweet Potato Fried Rice Recipe

Ingredients
- 2 medium sweet potatoes
- 2 cups cooked cold rice
- 2 tbsp oil
- 2 cloves garlic
- 1 tsp grated ginger
- 1/2 cup mixed bell pepper
- 2 tbsp soy sauce
- 1 tsp chili sauce
- 2 spring onions
- 1 tsp sesame seeds
- Salt and pepper to taste
- Coriander leaves
Step 1
Peel, wash, and dice sweet potatoes and set them aside.
Step 2
Heat oil in a large pan or wok over medium-high heat and saute diced sweet potato with a pinch of salt for 4-7 minutes.
Step 3
Add garlic and ginger and saute for 30 seconds until fragrant.
Step 4
Add mixed bell pepper and other veggies like corn and beans and saute until they turn tender.
Step 5
Add sauces, salt, and pepper, mix well. Also, add the cold rice and break up clumps. Toss well.
Step 6
Adjust the seasoning as required and stir-fry for 4-6 minutes.
Step 7
Add spring onion, sesame seeds, and coriander leaves. Serve hot!
