Kolkata's Restaurant Industry Grapples with Sudden LPG Cylinder Shortage

A sudden and severe shortage of LPG cylinders has plunged Kolkata's vibrant restaurant industry into a state of crisis, with numerous eateries struggling to maintain normal kitchen operations. Over the past several days, supplies have become increasingly erratic, forcing many establishments to implement emergency measures including scaling down menus, adjusting cooking techniques, and fundamentally rethinking their daily operations to manage the escalating situation.

Vulnerable Supply Chains Exposed

According to industry leaders, most restaurants typically maintain only minimal gas reserves, leaving them particularly vulnerable when fresh supplies are disrupted. Sudesh Poddar, president of the Hotel & Restaurant Association of Eastern India and owner of prominent establishments including Manthan, Songhai, and MS Bar & Lounge, revealed the severity of the problem. "We have not received cylinder deliveries for the past two days. Most restaurants operate with just five to six days of supply at most, sometimes stretching to seven days in reserve. We are already removing menu items that require high gas consumption," Poddar explained.

He further noted that while some kitchens are attempting to adapt, practical alternatives remain limited. "Induction cooking is being utilized for certain quick-to-prepare dishes, but this approach is completely inadequate for mass cooking operations that restaurants depend on," Poddar added, highlighting the fundamental challenge facing commercial kitchens.

Operational Disruptions Mounting

The unpredictability of cylinder availability is already forcing significant operational changes across the city's dining landscape. Ishtiaque Ahmad, managing partner of Shiraz Golden Restaurant, detailed how his establishment's daily requirements are far from being met. "Our normal operation requires ten cylinders daily, but today we received only two. The availability fluctuates unpredictably each day. In response, we have minimized our breakfast offerings and suspended all banquet hall bookings," Ahmad stated, illustrating the immediate impact on restaurant services.

While some establishments are already feeling intense pressure, others are attempting to maintain normal operations for as long as possible. Debaditya Chaudhury, managing director of Chowman Hospitality Pvt Ltd, reported that his restaurant group is continuing operations without menu alterations for the time being. "As of today, our menus remain unchanged and we are fully functional. This is undoubtedly a difficult period, but we are striving to remain completely operational for as long as our supplies allow," Chaudhury affirmed.

Critical Days Ahead for Food Sector

With the supply situation remaining highly uncertain, the coming days will prove crucial for Kolkata's entire food and beverage sector. Industry observers warn that if the cylinder shortage persists, more restaurants may be compelled to implement drastic measures including:

  • Further reducing menu offerings and variety
  • Limiting service hours and customer capacity
  • Exploring alternative cooking arrangements
  • Temporarily suspending certain services or operations

The crisis highlights the delicate balance of Kolkata's restaurant ecosystem and its dependence on consistent LPG supplies. As kitchens across the city implement contingency plans, the industry faces a challenging period of adaptation and resilience testing that could reshape operations in the near future.
