Green Butter Chicken Debuts in Chandigarh

Chef Harpal Singh Sokhi has introduced his much-talked-about green butter chicken exclusively at his newly opened restaurant, Karigari, in Sector 26, Chandigarh. The dish, endorsed by filmmaker Farah Khan and her children, made its debut in Chandigarh before rolling out to any of his other 12 outlets. Sokhi, however, refused to share the recipe when asked.

The Namak Shamak Phenomenon

Sokhi is widely recognized as the "Namak Shamak guy" from his TV show Turban Tadka. He explained that the phrase originated from a conversation with director Girish Madhu, who asked how he wanted to be remembered. Inspired by Mahatma Gandhi's Satyagraha movement centered on salt, Sokhi connected the element to food, coining "Namak Shamak, Namak Shamak Daal Dete." He noted, "People don't remember my name, but they do remember the Namak Shamak guy."

Fusion Food Philosophy

About 50-60% of Karigari's menu is rooted in tradition, while the remaining 40% features international influences and experimental combinations. Sokhi emphasized balance: "We don't create fusion for the sake of it. Our approach is to understand the flavours of ingredients and pair them thoughtfully." Examples include parmesan chicken tikka and green garlic butter chicken with parmesan.

Pav Bhaji Fondue and Open Kulcha

Sokhi demonstrated a pav bhaji fondue, where the classic Mumbai dish was elevated with a cheese sauce glazed using a blow torch. He also showcased an open kulcha: a half-cooked bread bowl filled with chicken tikka, makhani sauce, onion, and cheese. When asked about the liberal use of cheese, he declared, "Punjab loves cheese."

Signature Dishes and Future Plans

The green butter chicken, made with green tomatoes, pesto, burnt garlic, and crushed black pepper, is currently available only in Chandigarh. Sokhi plans to expand its availability after testing the response. Karigari's footfall indicates strong local appreciation for his innovative yet rooted cuisine.
