Odisha Appoints Chef Ranveer Brar as Culinary Ambassador to Showcase Temple Cuisine
In a significant move to promote its rich culinary heritage, the Odisha government has appointed celebrity chef Ranveer Brar as the brand ambassador for Odia cuisine. This decision, announced during the recent Odia Paksha celebrations, aims to bring the state's traditional foods to a global audience. The formal agreement was signed by the state's Tourism Department in the presence of Chief Minister Mohan Charan Majhi.
Expanding the Culinary Promotion Team
Alongside Chef Brar, the government has also enlisted MasterChef India finalists Anju and Manju, as well as Season 6 winner Abinas Nayak, to champion traditional Odia food. This collaborative effort underscores Odisha's commitment to preserving and sharing its culinary traditions, which are renowned for their simplicity, robust flavors, and deep cultural roots.
Chef Brar's Enthusiasm for Odia Heritage
Expressing his delight at the appointment, Chef Ranveer Brar emphasized the importance of showcasing Odia cuisine worldwide, particularly the sacred Mahaprasad of Lord Jagannath. He called for support from the people of Odisha, both online and offline, to help spread awareness about this unique culinary tradition.
The Sacred Mahaprasad: A Culinary Marvel
According to the Odia Tourism official website, the Mahaprasad refers to the food offered to Lord Jagannath at the Puri temple. This complete meal, cooked in earthen pots over firewood, includes:
- Rice
- Dal (lentils)
- Vegetables
- Khichdi (a rice and lentil dish)
- Sweets
In Hindu mythology, it is believed that Lord Vishnu meditates in Badrinath, gets dressed in Dwarka, has his lunch in Puri, and retires for the night in Rameswaram, highlighting the spiritual significance of this offering.
Unique Cooking Methods and Community Spirit
The Mahaprasad is prepared in a distinctive manner, with earthen pots stacked on top of each other over burners, where the top pot cooks first. This process, carried out daily over firewood, is considered sacred and is shared among devotees without any caste or status distinctions, symbolizing equality and community.
A key component of the Mahaprasad is Abhada, the main meal offering that consists of:
- Rice
- Dal
- Mixed vegetable curries
- Khatta (a tangy preparation)
This simple, wholesome meal adheres to temple cooking traditions by being free from onion and garlic.
World's Largest Community Kitchen
The kitchen at the Jagannath Temple is recognized as the world's largest community kitchen, spanning over 15,000 square feet with 32 rooms and more than 270 earthen ovens. It serves over 100,000 devotees daily, employing more than 600 cooks and 400 assistants to prepare the traditional 56 dishes, known as Mahaprasad or Chhapan Bhog.
Water for the kitchen is sourced from two wells near the temple, named Ganga and Jamuna, adding to the ritualistic purity of the preparation.

The Mahaprasad features a variety of dishes, including:
- Sadha anna (plain rice)
- Kanika (rice cooked with ghee and sugar)
- Dahi pakhal (a mixture of curd, rice, and water)
