"We have advised hotels to rationalize menus, prioritize dishes that require less gas usage, and adopt fuel conservation practices in kitchens," explained Sumit Suri, chairman of the MP committee of the Hotel and Restaurant Association of Western India and president of the Indore Hoteliers Association. "The idea is to ensure continuity of services and avoid operational disruption if LPG availability tightens."

  • Utilizing pressure cooking methods to reduce cooking time
  • Consistently using lids during cooking to retain heat and conserve fuel
  • Simplifying restaurant and banquet menus to focus on less fuel-intensive dishes
  • Consolidating kitchen operations for hotel groups managing multiple outlets
  • Implementing daily LPG consumption monitoring to track usage and prevent wastage

Exploring Alternative Cooking Systems

The advisory strongly encourages hotels to investigate and potentially adopt alternative cooking systems that could partially shift operations away from LPG dependence. Recommended alternatives include:

  1. Induction cooktops for precise temperature control
  2. Electric fryers for deep-frying operations
  3. Electric griddles for flat-top cooking
  4. Electric rice cookers for consistent grain preparation
