Ingredients

  • 1 cup lauki (bottle gourd)
  • 1 cup semolina (sooji)
  • 1/2 cup curd
  • 1 small onion
  • 1 green chili
  • 1 tsp grated ginger
  • 2 tbsp coriander leaves
  • Salt to taste
  • 1/2 tsp cumin seeds
  • 1/4 tsp baking soda
  • Water as needed
  • Oil for greasing

Step-by-Step Instructions

Step 1: Prepare the Lauki

Peel, wash, and grate the bottle gourd. Squeeze out all excess water from the grated lauki.

Step 2: Make the Batter Base

Add the grated lauki to a mixing bowl along with curd and sooji. Mix well until combined.

Step 3: Add Aromatics

Chop the onion, green chili, ginger, and coriander leaves. Add them to the mixture and combine thoroughly.

Step 4: Season and Rest

Add salt, cumin seeds, and baking soda to the batter. Mix well and let it rest for 5 minutes.

Step 5: Cook the Paniyaram

Heat a paniyaram pan and grease it with oil. Pour the batter into the cavities, filling them evenly.

Step 6: Flip and Serve

Cover the pan and cook for 5 minutes. Flip each paniyaram and cook the other side until golden brown. Serve hot with coconut chutney and sambar.
