Cucumber is a low-calorie ingredient that is high in water, containing about 96% water, making it a comforting summer food. From breakfast to dinner, cucumbers can be incorporated in various ways to create healthy and hydrating dishes. They provide essential nutrients such as vitamin K, vitamin C, potassium, magnesium, and fiber, which collectively support hydration and overall health. The high fiber and water content promote better digestion and can help prevent bloating. Antioxidants present in cucumbers, especially cucurbitacins and flavonoids, help combat inflammation and protect cells from damage. Cucumber also supports bone health by providing vitamin K, which is important for calcium absorption and bone repair.
Alarming Incident at Katihar Railway Station
However, this hydrating summer food is no longer considered safe due to a recent incident. In a viral video captured on camera, a group of women were seen dipping cucumbers in a green liquid to make them appear fresh. The incident took place at Katihar railway station in Bihar. Shockingly, this illegal activity was conducted openly on a railway platform. When the video went viral on X, Railway Seva responded, stating, "Related officials are being informed," and added, "The matter has been forwarded to the concerned authorities for necessary action." According to a report by NDTV, the Railway Protection Force (RPF) in Katihar has taken action, and nine women selling cucumbers in this manner at the station have been detained and are currently being questioned.
Why Is This Alarming?
According to food experts, while the exact nature of the green liquid is still unclear, it is certainly a chemical used to improve the appearance and shelf life of cucumbers. This raises concerns about the safety of such practices.
Are Colouring of Fruits and Vegetables Permitted by Law?
According to the Food Safety and Standards Authority of India (FSSAI), the use of colours on fruits and vegetables is not permitted under the provisions prescribed in sub-regulation 2.3.6 of the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011.
What Is the Green Liquid?
According to FSSAI data, the green liquid is mostly made with Malachite Green dye. It is commonly used on green vegetables like peas or leafy greens to enhance their colour. However, it is extremely harmful to human health and is often used in aquaculture but banned for direct consumption.
Health Risks of Artificial Colouring
Artificial dyes and colours often contain harmful chemicals such as Malachite Green, copper sulfate, Rhodamine B, and Sudan dyes. All these chemicals are not safe for consumption. They can cause allergic reactions, especially in children and sensitive individuals. They can also lead to digestive issues like nausea, vomiting, and abdominal pain. According to experts, prolonged exposure can contribute to long-term health problems, including liver and kidney damage.
