The Food Safety and Standards Authority of India (FSSAI) has released important guidelines for refrigerator food storage during the summer months. With rising temperatures, the risk of foodborne illnesses increases, making proper refrigeration practices essential. FSSAI emphasizes that simple mistakes like placing raw chicken above leftover milk or raw meat near fresh fruits can lead to cross-contamination and health risks.
Tip 1: Separate Meat and Seafood
FSSAI strongly advises keeping raw meat, poultry, and seafood separate from other foods to prevent cross-contamination. Raw meat and seafood often harbor harmful bacteria. If their juices drip onto fruits, vegetables, dairy products, or cooked food, contamination can spread quickly. Store these items carefully in sealed containers on lower shelves to avoid leaks.
Tip 2: Maintain the Right Temperature
The authority recommends setting your refrigerator below 5 degrees Celsius to slow bacterial growth. Even a slight increase in temperature can create conditions where bacteria multiply faster, spoiling raw and dairy foods. Use a thermometer to monitor the temperature regularly.
Tip 3: Store Eggs Properly
FSSAI suggests storing raw eggs in the refrigerator rather than at room temperature in the pantry. Additionally, avoid consuming raw or undercooked eggs during summer to prevent infections. Keep eggs in their original carton on a shelf, not in the door where temperatures fluctuate.
Tip 4: Defrost Regularly
The regulatory body advises cleaning the fridge thoroughly and defrosting it every two weeks. Regular defrosting ensures even cooling and prevents ice buildup, which can lead to uneven temperatures, food spoilage, and appliance damage. Proper defrosting helps protect your family from food poisoning and digestive infections.
